The new stopper! http://www.comincioli.it/home/main/News-events/The-new-stopper We have chosen to adopt an innovative synthetic cork to seal our bottles.

A polymer made up of three parts.

 

The shield:  this is the only part of the stopper which comes into contact with the product; it is designed to guarantee there is no interaction with the wine.

 

The frame: this is a central structural cylinder, which has the role of preventing the stopper from elongating and guaranteeing  elasticity, ensuring constant and uniform contact with the glass over time; it has also been designed to make it easier to insert the corkscrew.

 

The body: this is the compressible section which adheres to the inside of the bottle neck ensuring the seal and transpiration of the stopper.

 

 

Thanks to this new stopper we can protect our wines against chemical contamination or the “corked” taint caused by the possible presence of TCA in the cork. Furthermore it also protects against all those sensory changes which may be difficult to identify, due to considerable differences in permeability between one cork and another. Another interesting aspect is the use of the stopper after opening: it can be easily inserted into the bottle the other way round in order to seal it securely.

The Valtenesi area http://www.comincioli.it/home/main/The-area/The-Valtenesi-area Situated in the province of Brescia, in the area between Lake Garda and the morainic hills, the Valtenesi area stretches out over seven municipalities along the banks of the lake: Puegnago del Garda, Padenghe sul Garda, Moniga del Garda, Manerba del Garda, San Felice del Benaco, Polpenazze del Garda and Soiano del Lago.

In the Valtenesi area the last remaining mountains give way to softly rolling hills and the landscape is distinguished by luxuriant vegetation, dotted with villages and castles, old chapels and 18th churches which enchant visitors.

The municipality of Puegnago is made up of six separate villages: Mura, Palude, Monteacuto, Raffa, San Quirico and Castello.

Thanks to Giorgius de Comenzolis, it established itself in the village of Castello, where for more than four and a half centuries it has dedicated itself to safeguarding and enhancing the autochthonous varieties typical of Lake Garda.

Initially concentrating on production of Groppello wine, typical of the Valtenesi area, in 1921 the vineyard received its first official recognition from the Ministry of Agriculture, thanks to the work and commitment of Francesco Comincioli.

From 1943 the traditional way of producing Groppello wine, with partial drying of the grapes before processing, was kept alive by Giovanni Battista Comincioli. His first  bottles were produced in 1956. In 1966, after ten years, his work brought the vineyard another prestigious award given in Asti: the Douja d’Or gold medal.

In 1978 the vineyard passed into the hands of his son Gianfranco, who followed the traditional approach adopted up to that time, but who also made his own personal contribution through research, studies and experimentation directed at enhancing production while fully respecting the typical characteristics of the area.

He also made a major contribution to olive oil production, thanks to years of research and study regarding cultivation techniques, the fruit and the extraction process. This led to the construction of a technologically advanced oil mill, which makes it possible to obtain extra virgin oil from the pulp alone of the olives, which are pressed without the stones.

Originally a dream, in 2001 Comincioli’s extra virgin olive oil made with pitted olives became a reality.

Today the firm is run by Gianfranco, the current owner, with the help of his wife Elisabetta and their sons Roberto and Andrea.

Since 1552 the family has been based in Puegnago, a historic village in the Valtenesi area, north of the hills of morainic origin overlooking the Brescia side of Lake Garda. Here vines and olive trees have always represented a fundamental resource for the area.

Today the firm is made up of 11 hectares of vineyard and 10 hectares of olive groves. These are dedicated to safeguarding important autochthonous varieties, with the scope of enhancing their typical characteristics.

Comincioli’s wines and oil are made with this philosophy: it is a process which takes place day by day, year after year, in order to guarantee the healthiness and quality of its products.

Olive oils http://www.comincioli.it/home/main/Olive-oils Our extra virgin olive oil made with pitted olives is the result of a specific company philosophy and approach, which aims to make the most of the health benefits and sensory and qualitative characteristics of Comincioli’s extra virgin olive oils.

The firm is convinced that  the quality of the oil depends on the trees and the environment.

Each production phase takes place with complete respect for the olive tree and its fruit, in order to best enhance its characteristics, aroma and flavour.

The innovative pressing process makes it possible not only to completely separate the fruit from the stone in order to obtain oil made exclusively using the pulp of olives, but also to avoid air contact during processing. This allows complete protection from oxidation, which damages quality and duration over time.

To guarantee quality levels for consumers, in addition to the nutritional table, the  label also gives the results of analysis of acidity, oleic acid, peroxides, polyphenols and vitamins  contained for each of the oils produced, carried out by the Centro di Ricerca e Sperimentazione in Agrobiotecnologie of Metapontum  Agrobios in Metaponto di Bernalda (MT).

Wines http://www.comincioli.it/home/main/Wines In Comincioli’s vineyards no space is given over to international grape varieties.

The company objective is indeed linked to enhancing the typical qualities of autochthonous products from the area:

▪  Groppello, the flagship wine of the Valtenesi area, produced using Sangiovese, Marzemino and Barbera grapes, the typical varieties provided for by the D.O.C. Riviera del Garda Bresciano regulations.

▪  Erbamat, an ancient variety of white grape, by now in the process of extinction, processed and blended with another autochthonous variety, Trebbiano Valtenesi.

These grapes are used to produce the six Comincioli wines: Sulèr, Gropèl, Zephiro, Castèl, Diamante and Perlì.

The vines are between 3 and 70 years old, with between 3,500 and 6,500 vines per hectare. The grapes produced are carefully selected, made into wine and bottled by the firm, which produces around 50 thousand bottles a year.
